BBQ Chicken Salad – Cook Eat Run
Another simple, yummy salad that is great for summer nights. Make a big batch of BBQ chicken and then enjoy the leftovers for this salad. Of course you can experiment and add whatever fixin’s you like!

- 1 Head of Lettuce, cleaned and chopped
- 1 Tomato, diced
- ¼ Cup shredded Cheddar cheese
- ½ Avocado, diced
- ½ Cup Cooked Corn
- Into a bowl, add the lettuce, tomatoes, cheddar, avocado and corn.
- Add 2 Tbsp of the Shallot vinaigrette and salt & pepper. Toss well. Add more vinaigrette if needed.
- Divide the salad onto 4 plates.
- Slice the chicken into bite size pieces and add onto the top of the salads.
