BBQ Chicken Salad – Cook Eat Run

Another simple, yummy salad that is great for summer nights.  Make a big batch of BBQ chicken and then enjoy the leftovers for this salad.  Of course you can experiment and add whatever fixin’s you like!

  • 1 Head of Lettuce, cleaned and chopped
  • 1 Tomato, diced
  • ¼ Cup shredded Cheddar cheese
  • ½ Avocado, diced
  • ½ Cup Cooked Corn
  1. Into a bowl, add the lettuce, tomatoes, cheddar, avocado and corn.
  2. Add 2 Tbsp of the Shallot vinaigrette and salt & pepper. Toss well. Add more vinaigrette if needed.
  3. Divide the salad onto 4 plates.
  4. Slice the chicken into bite size pieces and add onto the top of the salads.
