This is one of the very first recipes I ever made from the Pioneer Woman cooks. Chili is comfort food for the winter and a white chili with chicken is just the ticket when you are looking for something different. Continue reading White Chicken Chili
Finding new quick weeknight dinner ideas is sometimes a challenge. I hate making the same things over and over and try to make at least 2 brand new recipes a week. Continue reading Honey Mustard Chicken
This is the third recipe I have made in my new endeavor of cooking thru Essential Pepin. Continue reading Jacques Pepin Chicken Ragout
Peking Chicken. This filled the whole house with a great aroma and was so good. The basting marinade is super simple: Honey, soy sauce, tobasco & balsamic vinegar but it tastes really complex. Continue reading Peking Chicken
Bill is super duper crazy about this dish. I love it because it’s an elegant spin on what can be a bland “comfort food” dish. Continue reading Chicken and Dumplings
This was soooooooooo good! I love Chicken Broccoli pasta with alfredo sauce but that is certainly a special occasion dish. I’ve been working on making a healthy skinny tasty version of alfredo sauce and I finally nailed it! Continue reading Chicken, Broccoli & Rigatoni
I love cooking a whole roasted chicken. It makes me feel very Martha Stewart. This baby was on sale for $3.66. We had dinner, then I made chicken salad with the leftovers and the bones are in a ziplock in the freezer, waiting to be made into stock this weekend. You can’t beat that! Continue reading Perfect Roast Chicken
This is a super quick, easy delicious grilled chicken recipe. Would also be great on pork tenderloin. Warning: The chicken grilled is not that spicy but the reduced marinade sauce is super spicy, so use sparingly! My boys will just eat the chicken by itself and I (of course!) will add extra sauce Continue reading Sambal Grilled Chicken
This simple marinade is great with chicken but also works really well with fish & pork. I like to make a big batch of this chicken and then use leftovers to add to a salad or to make a chicken pita. Continue reading Grilled Lemon Garlic Chicken
Wings are a crowd pleaser. Whether you are throwing a cookout or a Football party, bring out a big batch of tasty wings and you will be left with any empty bowl, STAT. This recipe is one of my favorites, from Bon Appetit at Epicurious. They can be made ahead, so they are perfect for a party. You can make the glaze and marinate the wings ahead, then just cook them right before it’s time to serve. Sometimes when I am having a big party, I will make a huge batch and cook them in a disposable pan so that when they are done, I don’t even have a pan to clean up!
