Fresh July blueberries. Bubbling in the oven with cobbler topping turning lightly brown. Served in a bowl with vanilla ice cream melting all over it. Summer heaven in a bowl! Tip: You can cook this for about 25 minutes in the morning, ahead of when you want to serve it and then just finish in the oven later when you want to eat it.
- 3 cups fresh blueberries
- 3 tablespoons white sugar
- ⅓ cup orange juice
- ⅔ cup all-purpose flour
- ¼ teaspoon baking powder
- 1 pinch salt
- ½ cup butter, softened
- ½ cup white sugar
- 1 egg
- ½ teaspoon vanilla extract
- Preheat oven to 375 degrees F (190 degrees C).
- In an 8 inch square baking dish, mix blueberries, 3 tablespoons sugar, and orange juice. Set aside. In a small bowl, thoroughly mix flour, baking powder, and salt. Set aside.
- In a medium bowl, cream butter and ½ cup sugar until light and fluffy. Beat in egg and vanilla extract. Gradually add flour mixture, stirring just until ingredients are combined. Drop batter by rounded tablespoons over blueberry mixture. Try to cover as much of filling as possible.
- Bake in preheated oven for 35 to 40 minutes, until topping is golden brown and filling is bubbling.

Where do I start with this? What is a Pots de Creme? It is a french dessert, that is a custard but I would describe it as “Ultimate Gourmet Pudding”. It can be made in many flavors but I have only had chocolate and that is so damn amazing, I have decided to just stick with that!
I always double this recipe. They will stay good in the fridge for up to 3 days if they aren’t eaten sooner. Brian keeps a working inventory when I make these to make sure he gets his fair share, he is crazy for them!

Sunnycrest is a local farm in my home town. They open in June with Strawberry season and I shop there all summer long for the tomatoes, blueberries, corn, zucchini, amazing lettuce, the list goes on. Then in the fall, I get their delicious apple cider and my favorite Gala apples. They close the day before Thanksgiving, so I had to go Saturday to get another supply of apples.
